How much sugar is optimal for apricot jam?
Sugar plays an important role in preserving jam, helping to prevent the growth of bacteria and mold.
It also acts as a natural gelling agent in apricot jam, helping to thicken the preparation. Reducing the amount of sugar can make the jam less thick and more liquid.
That’s why the amount of sugar is so important in our artisan jam recipes.
Today, the % of jam sugar is standardized by French and European legislation.
To qualify for the “jam” label, jams must be cooked to a minimum sugar content of 55%. This is called brix or dry extract.
Warning: if there’s an s for “sugars” on the label, it’s not a mistake!
By law, all the sugars in a jam must be measured after cooking: those added to preserve the fruit, as well as those naturally contained in the fruit itself!

Which fruit goes well with apricot jam?
When combining fruits in a jam, it’s important to take into account the sweetness and acidity levels of each fruit.
